It was my sisters birthday recently. I usually bake her a ridiculously chocolaty chocolate cake, but this year she requested something lighter, with no chocolate. No chocolate! I did manage to come up with something. It actually might be one of my best cakes so far…. But it would be better with chocolate!
It’s based on a BBC Rose and Raspberry recipie, which I used recently for my Great Aunts birthday cake. I was a bit disappointed with it though, the rose flavour was barely detectable. This time, I tried a different brand of rose water, and increased the amount in the cake. Instead of pairing it with raspberries, I used lime juice (bottled, from our new local Lebanese supermarket!) in the cake, and fresh lime zest and juice to make a pouring icing for the top. The filling is cream cheese with icing sugar and rose water, not too sweet, but a creamy and delicious contrast from the tangy lime icing.
My sister spotted me working on some embroidery As a gift for someone else and complained that I hadn’t done any for her. So, clearly, I had to whip something up for her birthday! It’s a bit of a rush job, but she seemed to like it. The names are of her three dogs, and the colours chosen to go with her decor.
Its a little crowded, I didn’t draft the design properly before starting. If I’d had more time I’d have tried to fix it. Even so, my sister seemed to like it.
